What is freeze drying?
Freeze-drying consists of removing water from a liquid, pasty or solid product, using deep freezing and then vacuum evaporation of the ice without melting it.
This process (called sublimation) takes place at a very low temperature and pressure, leaving behind a high-quality product. The aim of freeze-drying is to produce a substance with good storage stability and which remains unchanged after reconstitution with water, although this also depends a lot on the packaging and storage conditions.
